What are some things we know are scientifically possible but don't have the technology for yet?

- Desalinization of ocean water to use as drinking water. We can do it on a small scale and we can do it very expensively on a large scale, but someday I hope we can provide something cost affordable, easy to maintain, and easy to build/install that third world countries can use to provide safe drinking water for their population from the ocean.

- Regrowing teeth. I remember ready a study where some Indian scientists had some luck with it. It probably wouldn't ever make it to the USA though, since dentistry is sort of the final free-for-all section of healthcare and they vigorously defend their ability to charge obscene rates and remain outside of the realm of "healthcare" itself.
